Healthy Dish Descriptions



Beef & Veggie Chili: Lean ground beef, zucchini, bell peppers, onions, tomatoes, and broth cooked for hours into a Delicious & Healthy chili!


B&B...Burger & Broccoli: Our traditional hamburger steaks, made into 7oz. patties, baked and topped with grilled onions and mushrooms. Served with steamed broccoli drizzled with clarified butter.


Burger & Green Beans: Our traditional hamburger steaks made into 7oz. patties, baked and topped with grilled onions and mushrooms (optional). Served with our Country Style green beans seasoned with bacon bits on the side.


Burger & Sweet: Our traditional hamburger steaks made into 7oz. patties, baked and topped with grilled onions and mushrooms (optional). Served with our Whipped Sweet Potatoes on the side (fresh Louisiana sweet potatoes baked, mixed, & whipped with a drizzle of clarified butter, coconut palm sugar, and a drizzle of fresh & Local O'Neil's Apiary Honey).


Chicken Bowl: Grilled chicken is sliced and placed over our fresh stir fry veggies with broccoli, carrots, cauliflower, green beans, sweet bell peppers, purple onions, and mushrooms. Served over a scoop of our new brown rice cooked in homemade, seasoned chicken broth.


Chicken Cacciatore: Whole roasted chickens deboned and added to a delicious crushed tomato marinara with slices of multi-colored bell peppers, onions, and sliced mushrooms (no mushrooms by request). Served with angel hair pasta on the side.


Chicken Parmesan: Boneless, skinless chicken breast marinated and baked before being sliced & topped with low-fat mozzarella cheese, homemade marinara and sprinkled with parmesan. Served with steamed California veggie blend (broccoli, carrots, & cauliflower) on the side.


Fish Bowl: Beautiful white fish fillet is seasoned, baked, and placed over our fresh veggie stir fry of broccoli, carrots, cauliflower, green beans, sweet bell peppers, purple onions, and mushrooms. Served over a scoop of our new brown rice cooked in homemade seasoned chicken broth.


Louisiana Creole Bowl: Start with the holy trinity (onions, peppers, & celery) and chopped garlic sautéed in olive oil. Crushed tomatoes, boneless chicken thighs, andouille sausage, and shrimp are then added to the pot with chicken broth, almond flour, and Louisiana seasonings.


Fish Scampi: Beautiful, flaky, white fish fillets (5-7oz.) seasoned and baked in a delicious, light scampi sauce with clarified butter, fresh lemon juice, and the perfect seasonings. Served over fresh, sautéed green beans.


Grilled Pork Chop & Sweet Potatoes: Marinated, seasoned, whole bone-in sirloin pork chops are grilled and served with our Whipped Sweet Potatoes (fresh Louisiana sweet potatoes baked, mixed, & whipped with a drizzle of clarified butter and fresh Local O'Neil's Apiary Honey).


Italian Chicken: Chicken grilled in Italian spices (5oz.) sliced and covered in a light marinara sauce, topped with a sprinkle of parmesan. Served with zucchini slices on the side.


Gumbo: Start with the holy trinity (onions, peppers, & celery) sautéed in olive oil with almond flour to make a flavorful roux. Slow cooked, homemade chicken stock is added with deboned, roasted chicken, andouille sausage, and Louisiana seasonings to finish off this wonderful, carb-free, Paleo Gumbo! Served with our whipped sweet potatoes mixed with clarified butter and coconut sugar on the side.


Louisiana Paella: Boneless, skinless chicken thighs, Louisiana Smoked Andouille, and tender Louisiana shrimp cooked to perfection in chicken broth, white wine, onions, bell peppers, and saffron-infused yellow rice. Served with petite green peas on the side.


Meatballs & Marinara with Fresh Sautéed Zucchini: Extra lean ground beef, Italian breadcrumbs, parmesan, and the perfect seasonings combined and rolled into large meatballs before baking. Baked meatballs are slow simmered in our marinara with crushed tomatoes, local honey, and Italian seasonings. Topped with a sprinkle of parmesan.


Mexican Lasagna: Lean ground beef, pinto beans, black beans, whole kernel corn, enchilada sauce, green chilis, seasoning veggies, and our homemade salsa cooked and layered with corn tortillas, fiesta blend cheeses, and sprinkled with queso fresco on top.


Monterrey Chicken: Tender strips of grilled chicken breast topped with sliced mushrooms (optional), crumbled bacon, and cheddar cheese (by request). Served with steamed broccoli.


Pork Chop & Taters: A portion of our smothered pork chops (boneless pieces) slow baked in pork au jus. Served with a side of our Healthy Sweet Potatoes (Louisiana sweet potatoes baked, mixed, & whipped with coconut palm sugar, a drizzle of clarified butter, and fresh, Local O'Neil's Apiary Honey).


Pot Roast & Gravy: A combination of Sirloin Beef Roast and Boston Butt Pork Roast seasoned and slow roasted for hours in a delicious light brown gravy with carrots and potatoes. Served with green peas on the side.


Pork Roast & Taters: A portion of our pulled pork roast in pork au jus with a drizzle of barbecue sauce. Served with a side of our Whipped Sweet Potatoes (Louisiana sweet potatoes whipped with coconut palm sugar, a little butter, and fresh Local O'Neil's Apiary Honey).


Shepherd's Pie: Lean ground beef sautéed with seasoning veggies in beef broth with peas & carrots. Topped with mashed cauliflower.


Shrimp Bowl: Tender Louisiana shrimp sautéed with the perfect seasonings and placed over our fresh veggie stir fry of broccoli, carrots, cauliflower, green beans, sweet bell peppers, purple onions, and mushrooms. Served over a scoop of our new brown rice cooked in homemade seasoned chicken broth.


Shrimp Creole: Start with the holy trinity (onions, peppers, & celery) and chopped garlic sautéed in olive oil with crushed tomatoes. Louisiana shrimp are added to the pot with shrimp broth and the perfect Louisiana seasonings.


Stuffed Power Pepper: Lean ground beef, shredded pork roast, zucchini, carrots, bell peppers, and onions cooked and seasoned to perfection. Mixture is stuffed into fresh bell peppers and covered in our marinara sauce.


Taco Bowl: Lean ground beef seasoned with Mexican spices served over Spanish rice. Topped with black beans, corn, and a sprinkle of fiesta cheese blend. Served with a side of our fresh homemade salsa.


Tuscan Chicken: Pan seared chicken breasts in olive oil, topped with a fabulous sauce of white wine, sun dried tomatoes, artichoke hearts, and unsweetened almond milk. Served over fresh spinach leaves.
